Kaye and Geoff's Recipes - Biscuits


Moroccoroons

1 egg					150g icing sugar
Vanilla essence				225g ground almonds
zest of a lemon				1/4 tsp cinnamon (no more!)

In a large bowl, beat the egg, then add the icing sugar and mix well. Add in the almond meal, vanilla, finely-chopped zest and cinnamon.

Mix well, turn out onto a board and knead until smooth, then roll into one or two "sausages". Cover and leave for at least 20 mins.

Preheat the oven to 175°C. Line a baking tray with non-stick baking paper. Cut the dough into chunks, place on baking tray and press a blanched almond onto the top of each one. Bake for about 15-20 minutes or until the cookies have just flattened and are lightly browned.

Cool and sprinkle with icing sugar to serve.
