15 gm dry or 30 gm fresh yeast 6 cups flour 1/4 cup warm water zest of 1 orange 1/2 cup sugar 1 egg yolk 1/2 cup butter 1 cup warm buttermilk sesame seeds 3 eggs 1/2 cup slivered almonds (optional)Dissolve the yeast in the water and add a teaspoon of sugar. Leave for 20 minutes or until frothy. Cream the sugar and butter until light and fluffy, gradually adding the eggs. Slowly add the buttermilk and the yeast mixture, mixing thoroughly. Now add the flour and orange zest slowly until you have a soft dough. Knead the dough until it is firm and elastic, about 15 minutes. Place in a greased bowl and let it stand, covered, for an hour in a warm place to rise to twice its size.
Knead the dough again and let it rise for another hour in a warm place. Knead once more and then divide the dough into two equal parts. Cut three strands out of each piece of dough, leaving them joined at one end. Plait the strands together to make two loaves. Put on a greased oven tray. Brush the top of the loaves with egg yolk, sprinkle with sesame seeds and lighly press in the slivered almonds.
Place into a warm place to rise again, about an hour. Place in a pre-heated oven at 190°C for 50 minutes or until the loaves are golden brown and sound hollow when tapped on the botom. Leave to cool on wire racks.
