Potato Rösti with Lemon Chive Cream

Potato Rösti

30g butter				1 onion, chopped
3 medium potatoes, coarsely grated

Squeeze the grated potato before cooking to reduce the amount of water and starch. Heat the butter in a pan, add onion and cook until soft. Add potatoes and stir until they are sticky; cool. Shape teaspoons of potato mixture into rounds with wet fingers and flatten. Heat some butter and oil in a pan and cook rösti for 3-5 minutes on each side until browned.

Lemon Chive Cream

90g cream cheese		2 tablespoons sour cream
grated zest of a lemon		1 tablespoon lemon juice
1 tablespoon chopped chives

Serve rösti topped with lemon chive cream, made by beating the above ingredients together.
