Rhubarb and Apple Grilled Dessert

2 cups rhubarb, peeled				2 apples
1/2 cup orange juice				3 tablespoons sugar
1/3 vanilla pod split lengthwise		1 large orange
2 egg yolks					3 tablespoons whipped cream

Cut the rhubarb into five cm lengths. Peel, core and quarter the apples and cut the quarters in half.Put the apple in a saucepan with the orange juice, vanilla pod and sugar. Bring to the boill and cook for two minutes, then add the rhubarb and cook until just soft. Peel and segment the orange. Arrange the apple, rhubarb and orange attractively in an oval gratin dish (25 cm long), draining any juice into a bowl.

Whisk this warm juice with the egg yolks for a minute until a little creamy, then gently mix in the whipped cream. Pour this preparation over the fruit and place under a hot grill untill the creamy preparation becomes golden on top. Serve immediately or keep aside for no more than two hours, in which case it should be reheated a little in a warm oven just before serving.
