Pepper and Pineapple Salad (6 servings)

1 medium pineapple		2 kiwi fruit
2 red peppers

Peel the pineapple, cut it into 2.5 cm slices, then cut each slice into wedges. Peel and slice kiwi fruit. Cut the peppers into strips.

Combine the pineapple, kiwi fruit and peppers. Pour the dressing over the salad, and refrigerate for at least one hour before serving.


1/4 cup oil				2 tblsp lemon juice
1/4 cup chopped parsley			1/4 cup chopped mint

Combine all ingredients. Strain
