Chilli Chicken and Paw Paw Salad


Chicken fillets or tenderloins or breast meat marinade

Make a marinade from chilli sauce, soya sauce and sesame oil. Marinate the chicken overnight, or at least for a few hours.

Cut the chicken into long strips. Fry these lightly in olive oil, garlic and onion, pouring in any left-over marinade as well.

Set on one side.


2 egg yolks		fresh lemon or lime juice
dried herbs		250ml olive oil

Squeeze fresh lime juice into the egg yolks. Add dried herbs, and beat slowly. Gently add the olive oil; be sure to do this gradually, otherwise the mixture will curdle. Keep beating the egg yolk mixture until all the olive oil has been added. If the dressing is not thick enough, add more olive oil; it should coat your fingertip when ready.


Add the dressing to the chicken, together with freshly cubed Paw Paw. Serve on a bed of mixed iceberg and minuette lettuces.

Mango is also a pleasant accompaniment.
